What Is Wu-Yi Tea?

Found in a mountainous province in China, wu-yi tea is grown in Fujian, in and around Mount Wuyi Shan which is where the tea get’s it’s name from. The tea leaves are picked in the early morning when the sun is just right, then are left to age for a certain amount of time before slowly being shaken into bamboo baskets. Then, the leaves are cured for as long as three days using special woven drying mats before they are ready to begin the fermenting process. Only after fermentation, hand-rubbing, sorting, and being checked for quality, will the leaves be at their most palatable and ready for use.

After two weeks of drinking wu-yi tea, participants in a recent study conducted at a university in California showed 50% fewer oxygen-free radicals, which have been connected not only to certain cancers and other diseases, but aging as well.
